The many flavours of rice

All-in-one rice recipes for a quick meal

Rice mixed with vegetables or meat can be a complete meal in itself. Easy to cook and nutritious, these tasty rice recipes are ideal for beginners and for those on the go.

Tomato rice

Ingredients

Basmati rice - one cup
Sliced medium sized onions - two
Finely chopped tomatoes - two
Red chilli powder - one tsp
Cinnamon - half an inch
Cloves - three
Bay leaves - two
Black cardamom - one
Ginger-garlic paste - 1 tsp
Green peas - one small cup
Finely chopped coriander leaves - quarter bunch

Method

Heat oil in a pan. Add bay leaves, cloves, cinnamon and cardamom. When the cloves pop, add the onions and fry till light brown. Add chopped tomatoes and saute. Put in the ginger-garlic paste and red chilli powder and saute. Add rice, green peas (optional), coriander and salt to taste and water. Mix well and allow it to cook till rice is done.

Vegetable rice

Ingredients

Cooked rice- one cup
Oil- one tsp
Medium onions-two
Tomatoes- two
Capsicum-one
Curry leaves-one stalk
Coriander-one small bunch
Grated coconut- two tsp
Grated carrot- one
Green chillies-three
Ginger- one inch piece
Mustard seeds- one tsp
Urad dal- one tsp
Channa dal- one tsp
Turmeric powder- one tsp
Salt-to taste

Method

Heat oil in pan and add mustard seeds. When it splutters, add the dals and fry till golden brown. Put curry leaves along with finely chopped green chillies and ginger. Add finely chopped onions and turmeric powder. Sauté till the onions become translucent. Add chopped tomatoes and sauté for three minutes. Add chopped capsicum and salt and fry till mixture is dry. Garnish with coriander leaves, grated coconut and carrot. Give the mixture a nice stir and add cooked rice. Switch off the stove and mix well.

Rice korma

Ingredients

Basmati rice- one and a half cups
Ghee - two tbsp
Medium onion- two
Corinador- one bunch
Ginger-garlic paste- one tbsp
Curd-one cup
Tomatoes- four or five
Red chilli powder- half tbsp
Turmeric- quarter tbsp
Jeera powder- quarter tbsp
Garam masala- half tbsp
Green chillies- four
Panner-100 gms
Salt- to taste
Method

Heat ghee in a pressure cooker. Add garam masala and finely chopped onions. Fry till golden brown. Add ginger-garlic paste, finely cut green chillies, chilli powder, turmeric and jeera powder and saute for a minute. Put in finely chopped tomatoes and cover the pan. Remove the lid when tomatoes are soft and add curd, grated paneer and coriander. Put in rice and water and wait for two whistles.
