Cleaning cabbage

How far is it safe to consume cabbage these days. What is the correct way or method of cleaning/washing cabbage. Does cabbage transmit infection or harbours bacteria. Also please give information about cleaning/washing carrot, beetroot, radish and cucumber.

It is absolutely safe to eat cabbage. Make sure that cabbage is fresh. Washing of cabbage should be done in 100-200 ppm chlorine solution for two-three minutes. It should be free from worms. Total Viable Count (TVC) should be less than 100 per gram. Likewise carrot, beetroot, raddish and cucumber should be washed in 100-200 ppm of chlorine solution for 2 to 3 minutes. Make sure that knifes and peelers used should be properly sanitised and chopping board should be neat and clean.

Yolk break

Whenever I try to make a single fry or sunny side up egg, the yolk always breaks. How do I prevent the yolk from breaking?

Firstly use freshest of possible eggs. In fresh eggs, egg yolks and whites are closer. Break eggs into a clean bowl before cooking. Use a good quality non sticking pan and wooden spoon to make eggs. Use moderate heat, cooking eggs at higher temperature leads to toughened eggs.

Puffed puri

How can I make my puris rise well?

Firstly make a dough using good quality wheat flour, salt and water. Mix the dry ingredients first, then use water to make a stiff dough . Knead well. Let it sit for half an hour. Make small balls. At the time of rolling make sure you roll them thin. Thin rolled puris rise better.

At the time of frying make sure the oil is of correct temperature. Puri will first sink in the oil and then float back on the top and puff up.

Cook puris on both the sides. Rava can also be added in puris at the time of making the dough to make them crisp.

Icicles in ice cream

You mentioned that I should add stabwell to my ice cream to prevent icicles from forming. Can I add it once the ice cream has been made?

Stabwell in ice creams can only be added at the mixing stage.
