Cook fast, stay light

Don't sweat it out in the kitchen for long hours. Try this quick meal


If you are tired of cooking and yet want to have a good meal, try this ragoût de mouton et de legumes. A delicious combination of mutton and vegetables, it is easy to make and wholesome too. Like the dishes mentioned in this column in the past two weeks, this one is also a summer specialityin many Pondicherry homes. It is a meal by itself. The method of cooking carrots, French beans, chowchow, potatoes, peas, cabbage, radish, nool-khol, onions, garlic, tomatoes and mutton together, make this dish unique and tasty. Light on spices and practically oil-free, it is served either with bread or plain white rice.

Ragoût de mouton et de légumes

Serve 6

Time 25 minutes

Ingredients

Mutton - half kg
Carrots - 100 gm, cut in big pieces
French beans - 100 gm, cut in big pieces
Chowchow - 1, cut in big pieces

Potato - 1 big, cut in big pieces
Cabbage - 100 gm, cut in big pieces
Radish - 4, cut in big pieces
Nool-khol - 2, cut in big pieces
Onions - 2 big, sliced
Garlic - 1 whole, peeled and crushed
Tomatoes - 4 big, cut in big pieces
Maida - 1 tbsp
Pepper - 1 tbsp
Oil - half tbsp Salt

Method

In a deep frying pan, heat oil, fry onions, garlic till golden, add mutton, and fry till golden; add tomatoes, cover pan and cook till they are soft. Cook mutton till three-fourth cooked. Now add all the vegetables on a low flame and cook till they are ready. Add pepper and salt, last. The vegetables and meat cooked together need very little salt. Serve piping hot with rice.
