Ever wondered what the culinary exchanges were during the Raj? Then Bridget White Kumar's cookery books on Anglo-Indian cuisine should be a reference. She first published The Best of Anglo-Indian Cuisine — A Legacy in 2004 and has now followed it up with A Collection of Anglo-Indian Roasts, Casseroles and Bakes and Flavours Of The Past.

The books feature old recipes of the British Raj such as railway mutton curry, dak bungalow curry and various vindaloos. The author says that she is trying to keep alive the traditions of the small community.
