Cook, the Chinese way

These Chinese snacks can be tried at home. And, they're yummy too



QUICK BITES These crisp tidbits go well with a Chinese meal

Bite into a crumbly spring roll, relish the spicy chilli paneer or enjoy fried baby corn - these tidbits are sure to pep up your Chinese dinner. What's more you can try them at home, for the recipes are quite easy.

Vegetable spring rolls

Ingredients
For the outer crust
Plain flour: 1 cup
Salt: 1 level tsp
Oil: 1 tsp
Water: a little
For the filling
Cabbage, shredded: 2 cups
Capsicum, shredded: half cup
Carrot, grated: half cup
Beans sprouted: 1 cup
Spring onions, finely chopped: half cup
Celery, finely chopped: 2 tbsp
Soya sauce: 1 tbsp
Vinegar: 1 tbsp
Chilli sauce: 1 tbsp
Ajinomoto: to taste
Salt: to taste
Plain flour: 2-3 tsp
Oil: 2 tbsp
Plain flour: paste
Oil: for frying

Method: Mix the plain flour with salt and oil. Add enough water to make a soft dough. Divide the dough into 10 equal parts. Roll each to a size of a chappati and roast them lightly on a hot tawa. Trim all the four sides to make a square shape. Repeat with remaining dough in the same manner. Keep it aside.

Heat the oil. Stir fry onions, spring onions and bean sprouts for 2 minutes. Then add the capsicum, carrot, cabbage and celery. Stir fry again. Remove from heat and then add soya sauce, vinegar, ajinomoto and salt. Sprinkle 2-3 teaspoons plain flour on top of the filling. This keeps the filling dry.

Spread the filling on each square and roll it up tightly. Seal the edges with flour paste. Heat the oil and deep fry the rolls until golden brown. Cut into 3-4 pieces and serve hot.

Chilli paneer

Ingredients:
Paneer: 500 gm
Capsicum, finely chopped: 2
Plain flour: 2 tbsp
Corn flour: 3 tbsp
Soya sauce: 2 tbsp
Spring onions, finely chopped: 2-3 tbsp
Garlic, finely chopped: 1 tbsp
Ginger paste: 1 tbsp
Chilli paste: 2 tbsp
Salt: to taste
Ajinomoto: to taste
Oil: 1 tbsp
Oil: for frying

Method: Cut the paneer into long pieces. Sprinkle plain flour and cornflower over it and deep fry. Soak the fried paneer in warm water for about 5 minutes. Drain and keep it aside. Heat the oil. Add the chilli and ginger paste. Stir fry for 2 minutes. Then stir fry the garlic pieces, capsicum and spring onions. Then add the paneer pieces and stir fry again. Add all the remaining ingredients and mix well. Serve hot.

Fried Baby corn

Ingredients:
Baby corn: 20 pieces
Baking powder: quarter tsp
Soya sauce: 1 tbsp
Black pepper: half tsp
Salt: to taste
For the batter
Plain flour: half cup
Corn flour: half cup
Ginger paste: 1 tsp
Chilli paste: 1 tsp
Baking powder: quarter tsp
Water
Salt: to taste
Oil: for frying

Method: Mix the baking powder, soya sauce, black pepper and salt in a bowl. Marinate the baby corn in this mixture for 15-20 minutes, stirring once or twice. Drain excess water. Make the batter by mixing the plain flour, corn flour, ginger paste, chilli paste, baking powder and salt to taste. Add water to make a batter of smooth consistency. Heat the oil. Dip each baby corn in the batter and deep fry in hot oil until golden brown. Drain on absorbent paper and serve hot with a sweet and sour sauce.
