RAIN AND RICE A risotto dish on offer at Pickwicks
Italian cuisine has much to offer beyond pasta and pizza. For instance, risotto, a delicious and delicate alternative to pasta. Ranveer Brar, the Executive Chef at The Claridges hotel in New Delhi, attempts to re-create flavours of risotto with a month-long festival called Riso in the Rain at its restaurant, Pickwicks.
The risotto prepared here is an assortment of rice imported from Italy. Arborio and Carnaroli are some common varieties of rice imported by chefs here. Says Brar, "Arborio is the most common variety. It is the most traditional rice. Carnaroli is a superior kind of rice with narrower and whiter grains." In Northern Italy, rice rules the day as it is cold over there. A great way to get through the cold winter is with a bowl of hot, creamy risotto. So, to beat the dank feel of the monsoons, risotto is a must try.
Riso in the Rain is part of the nine-month long cuisine promotion at The Claridges. The festival displays a wide variety of dishes from Northern Italy. The dishes are a combination of Italian cheese and variety of rice.
Desserts too
Finger licking and lip smacking desserts are also available. Steaming hot chocolate risotto with berry gelato and Mango arborio pudding with passion fruit Brule are a must try.
Some of the dishes from the menu are Arranchi (rolls stuffed with rice and cheese and deep fried), Italian salami, rosemary risotto with sausage bread and lobster risotto.
Risotto needs to be prepared slowly and classically to keep the aromas intact. The dish is a rare combination of grandeur and down to earth goodness.
If you need somewarmth and a little more comfort while the rain pounds on the roof, you now know where to head for steaming hot risotto. A meal for one costs around Rs.1000.
