Samosas and trans fats
HEALTH TIP Frying medium should not be overused or recycled
This letter is with reference to the article Yum, but... (MetroPlus, July 25, 2006). Samosas deep fried in raw or refined edible oils, as practised in India, do not have trans fats. The statement, "Fried samosas loaded with trans fats and calories aren't healthy," is misleading and is certainly an overstatement. If samosas are fried in vanaspati or any other hydrogenated oils/fats, one may encounter some quantity of trans fats. Generally, samosas are not fried in these fats.
Of course, the frying medium should not be overused or recycled repeatedly, as the polymerisation of fat takes place, which is not desirable for human consumption.
