SPICY STARTER Vegetable seekh kebabs

Can one prepare mayonnaise and paneer at home?

Yes Priya, mayonnaise and paneer can be very easily made at home. Following are the recipes.

Mayonnaise

Ingredients

Egg yolks: 2

Mustard paste: ½ tbsp

Salad oil: 300 ml

Lemon juice: 1 tbsp

Pepper: 3 gms

Salt to taste

Method

Place two egg yolks, mustard paste, lemon juice half, salt and pepper in a bowl. Using a blender or a whisk to beat the mixture and add oil drop by drop very slowly whisking continuously. Add rest of the lemon juice and oil drop by drop until the oil is used up. The mixture should be thick and perfectly smooth. If stored well covered in a refrigerator, it can be kept for almost 2 weeks.

Paneer

Ingredients

Full cream milk: 2 litres

Lemon juice: 4-5 tbsp

Muslin or cheese cloth

Method

Boil full cream milk and make sure it does not form skin on top. Add lemon juice or vinegar and turn off the heat. The milk will curdle. Strain the mixture through a muslin cloth and discard the whey. Place the muslin bundle on a flat surface and place a heavy weight on top for three to four hours. Cut it and use it as required.

Vegetarian seekh kababs

Ingredients

Potatoes, boiled & washed: 6
Urad dal: - 1 cup
Soya nuggets: 1/2 cup
Green chillies, finely cut: 3
Garlic paste: 1/2 tsp
Ginger paste: 1 tsp
Coriander, finely cut: 1 bunch
Lemon juice of 1 lemon
Salt to taste

Oil to deep fry

For garnishing: Chat masala, onion rings, lemon wedges

Method:

Soak dal for 1 hour and grind into fine consistency. Soak soya nuggets twice for 10 minutes each squeezing dry each time.

sMix all ingredients except onion rings and lemon wedges in a mixie till well-blended and thick enough to hold shape.

Keep aside for 15 minutes. Make about 20 balls and with greased hands and wrap each ball on seekh till all are made into seekhs. Gently remove from seekhs and deep fry to golden brown shaking the pan to get an even colour.

Garnish with amchur, onion rings lemon wedges and green dhania.
