Moong dal sprout paratha
Ingredients
For paratha filling:
Moong dal sprout: 1 cup
Green chillies, finely chopped: 3
Garam masala: 1 tsp
Cumin (jeera): 1 tsp
Coriander, finely chopped: 1 small bunch
Chilli powder: 1 tsp
Salt to taste
Medium sized onion, finely cut: 1
To make dough
Wheat flour: 2 cups
Maida: 1cup
Ajwain: 1tsp
Oil: 2 tbsp
Ghee: 2 tbsp
Salt to taste
Method
Pressure-cook the moong dal sprout without any water in it. Heat two tablespoons oil in the kadai. Add jeera to the oil, Then add green chillies and onions.
Once the onion is half cooked, add the sprout, chilli powder, garam masala and salt. Allow it to cool. Then add the coriander to it.
Make the dough using all the ingredients and keep it aside for half an hour.
Then make eight equal portions of it. Take each portion and make it like a cup and add the filling and close it. Roll it like a paratha and cook it on both the sides on a hot tawa adding little oil on both the sides. You can serve it with pickle and curds.
