Idli-Vegetable Mix delight
Here is a mouth watering multivitamin snack for you to relish. It can be served as a delicious and nutritious breakfast also.
Ingredients:
Idlis: 7-8Spring onion: 1 Tomato, medium size: 1
Vegetables: 250 - 300 gms (carrots, beans, cabbage, potato, capsicum - all put together)
Green chillies: 3
Mustard seeds: 1 tsp
Black gram seeds: 2 tsp
Garam masala :1 1/2 tsp
Oil: 4-5 tbsp
Small quantity of chopped coriander and curry leaves
Salt to taste
Method:
Slice the onion and tomato finely. Cut the green chillies and chop all the vegetables finely. Cut the idlis into small pieces (they can be mashed also) and keep aside.
Heat oil in a pan, add urad dal and mustard seeds. When they splutter, add the onions, green chillies and chopped curry leaves and fry for one minute. Add the cut tomatoes and fry again. Next, add the chopped vegetables and fry them till they are nearly done. Add salt and garam masala powder and mix well with the vegetables. After two minutes, add the idli pieces and mix thoroughly. Simmer the flame and stir till well done or when it gives off oil and the smell of the masala is gone.
Garnish with coriander leaves and serve hot with coriander chutney or coconut chutney.
