They are tasty and have medicinal properties too. Try some homemade podis for a change
|
It's not just the tasty podis that Rama Gopalakrishnan makes but her knowledge of curative and medicinal properties of various foods holds me riveted. She is a practising interior designer-architect, an astrologer and an expert at stocks and shares. But coming to her podis, the protein-packed peanut podi, with the zing of asafoetida, garlic and salt, eaten with a drizzle of ghee, is a delight. Some eat it with butter and toast. Rama carefully handpicks coriander leaves (the stalks are meticulously removed) and makes them into moist balls with tamarind, asafoetida, urad dal, salt and chilli powder. Dried and then ground into a podi, this one is not just yummy but also a great digestive. She also makes to order iron-rich curry leaves powder. If you need almond podi, she makes it for you fresh (100 gm at Rs. 75) The other podis cost Rs. 20 (100 gm).
She learnt to make these podis from her elder sister.
Not just podis, her tomato jam enlivened with a spark of lime (Rs. 70 per bottle) is interesting too. It tastes really good with chappati and reminds me of the sweet-squishy murabba.
So, if you are looking for hand pounded podis call Rama and she will take time off from her busy schedule to make them for you.

Queries Answered
* Reena wanted to know the correct method of making cabbage juice, which is known to cure ulcers.
Here's the recipe:
Ingredients
Carrots - medium size, 3
Head of cabbage - quarter
Celery - One stalk
Cherries - pitted, 5
Method
Wash and slice the head of cabbage into smaller pieces. To juice cabbage simply cut a segment out of the cabbage head and chop it into blocks small enough to fit down the juicer's feeding chute.
Juice the carrots and set aside. Juice the cabbage and celery together and put aside. Juice the cherries and combine all of the fresh juices together.
You should not drink more than 4oz of cabbage juice at a time and it is best mixed with other juices such as carrot or apple. If you consume too much cabbage juice in one go then you may experience a feeling of gas and slight cramps in the intestine due to the sulphur in the cabbage juice reacting with bacteria that exist in the intestines. Cabbage juice deteriorates rapidly, losing its essential nutrients, so should be consumed within a minute after it is made. Cabbage has no cholesterol or fat.
Cooking cabbage destroys most of its nutritious value and causes gas because of the sulphur. Raw cabbage is an excellent source of beta-carotene, sulphur, vitamin C and the trace mineral selenium, which is excellent for fighting cancer, protecting against heart disease, improving conditions of arthritis, slowing the aging process and encouraging beautiful skin. Within cabbage is a delicate amino acid called glutamine. This is excellent for healing stomach disorders, including ulcers.
