Prepare yummy sweets this festive season



SUGARY SWEET For those with a sweet tooth

It's time for sweetmeats with the festival season here. Here are some easy to make sweetmeat recipes.

Paneer Kalakand

Ingredients

Soft paneer, grated: 1 cup
Tinned milk powder: 10 tsp
Sugar: 1 cup
Thick fresh cream: 1 cup
Cardamom powder: 1/2 tsp
Saffron: few strands
Almonds and pistachoes, finely chopped: 2 tsp
Method

Take a non-stick frying pan. Mix the soft grated paneer, milk powder, sugar and cream. Cook on a low flame for about 20 minutes stirring continuously until the mixture thickness. Dissolve the saffron in a little milk and add it to the above mixture. Sprinkle the cardamom powder and mix well. Spread this mixture in a pie dish. Garnish with chopped almonds and pistachoes. Allow to cool for 2-3 hours. Cut into square pieces and serve chilled.

Bread basundi

Ingredients

Milk: 2 litres
Sugar: 2 cups
Bread: 5 slices
Cardamom powder: 1 tsp
Saffron: a few strands
Almonds and pistachoes, finely chopped: 2-3 tsp
Method

Put the milk to boil in a non-stick pan. Add sugar. Remove the crust of the bread, flake it and add it to the boiling milk. Keep on stirring and cook until it reduces to half the quantity. Dissolve the saffron and add it to the milk along with the cardamom powder. Add the chopped almonds and pistachoes. Serve chilled.

Apple rabri delight

Ingredients

Milk: 2 litres
Sugar: 8-10 tsp
Apple: 4 (medium sized)
Cardamom powder: 1 tsp
Saffron: a few strands
Method

Put the milk to boil in a non-stick pan. Add sugar and cook on a low flame stirring continuously until the milk mixture reduces to half. Peel and grate the apples. Add it to the milk. Give it one boil. Remove from heat. Add the cardamom powder. Dissolve the saffron in a bit of milk. Add it to the rabri. Mix well and serve.

Kesaria malai peda

Ingredients

Full fat milk: 1 litre
Sugar: 125 gms
Citric acid: 1/4 tsp
Corn flour: 1 tsp
Cardamom: 1/2 tsp (powdered)
Pistachoes: few pieces

Method

Put the milk to boil in a non-stick pan and keep on boiling until it reduces to half the quantity. Add the sugar and boil for another few minutes. Keep on stirring. Dissolve the citric acid in 2 teaspoon of water and add it to the boiling milk. The milk will curdle. Mix the corn flour in a little cold milk and add it to the above mixture. Keep on stirring until the mixture becomes thick. Dissolve the saffron in a bit of water and add it along with the cardamom powder and mix well. Allow this mixture to cool. Make small round flattened ball. Decorate with pistachoes and serve.
