Tasty rice delights

Here are some easy-to-make innovative rice dishes



FLAVOURED RICE DISH Plain rice can be made to look and taste different

There are many different ways in which plain rice can be made to look and taste different. We are all familiar with `Lime Rice,' `Jeera Rice' `Coconut Rice.' In all these varieties, using `Basmati' rice enhances the item. Here are four more.

Kothamallee rice

Ingredients

Cooked rice - one bowl
Cooked peas - two tbsp
Coriander leaves - a handful
Onions(optional) - fried golden brown
Scrapped coconut - two tbsp
Mustard seeds and Urad dal - a tsp each
Method

Wash the coriander leaves and coarsely ground with the scrapped coconut, and salt to taste. Splutter mustard seeds and urad dal in oil. Add browned onions, peas, rice and the ground paste. Serve hot with pappadams.

Spinach rice

Ingredients

Cooked rice - one bowl
Salt - to taste
Onion (optional) - fried onion
Spinach - a bunch (cleaned and chopped)
Peas - half a cup

Method

Cook spinach, onions and peas. Mix with rice and salt. Serve hot.

Pulav

Ingredients

Basmati rice - two glass
Water - four glass
Onions - two (cut into slivers and fried)
Peas - two tbsp
Butter - one tsp
Garam masala - half a tsp
Salt - to taste

To grind

Coriander leaves - a small bunch

Green chillies - four
Ginger - a little
Pepper corns - five to six

Method

Grind the ingredients with a little water. Mix this paste with the rest. Put everything in a rice cooker and cook till rice is done.
