IT'S HOT A young boy gets a taste of haleem
The formula for haleem is no secret. Cooked in most homes where the recipe is handed down like a treasure, M.A. Majeed of Pista House has managed to streamline the operations to an extent where the haleem bought at Toli Chowki will taste the same as the one bought at Shahalibanda. "It is no secret. I ensure that the ingredients are the best. And we don't cut corners to make the business more profitable," says Majeed, who can be credited with creating the first hot chain in the country. A haleem ordered in Delhi, Kolkata, Chennai or Mumbai before noon is delivered the same day before 8 p.m.
"Getting the formula right and people liking it year after year is a gift of Allah," says Syed Pasha who picked it up from friends, relatives and modified it.
Haleem eaters think differently as they tuck it in. "The basic aroma remains the same everywhere, but the taste varies. At some places it has wheaty flavour, at some places they make it spicy and at a very few places the meat dominates and gives the haleem that perfect taste," says a regular at Shadab.
