Palming off grease

Cook healthy, eat healthy to stay healthy

The Amatrra Spa at The Ashok hotel in New Delhi recently saw well-known Chef Sanjeev Kapoor release his 10th book, "No Oil Cooking".

A Popular Prakashan book, it is priced at Rs.275. It documents a series of no-oil recipes, both vegetarian and non-vegetarian.

Interacting with the audience by the poolside and cooking some recipes from his book, Chef Kapoor described the dangers of fat.

The book consists of recipes that not only reduce calories but are also easy to prepare. There are piping hot soups and starters to main courses like baked fish in red masala, daab chingri, burghul crusted chicken, kumbh hara pyaaz, garlic rasam and aloo kachalu chaat.

"Using a lot of oil in cooking causes unbalanced nutrition, various illness and even premature death due to coronary heart disease. I am concerned about modern unhealthy lifestyles and hence, staunchly propound the effectiveness of home cooking," the chef said.

He calls this book an extension of one of his earlier books, "Healthy Tasty" though the latest one takes the issue of fitness "more head-on".

Having taken more than a year in compiling the book, Kapoor said it has all new recipes because he doesn't like to cook the same dish twice!
