Cookies in various flavours are a popular snack


Cookies and homemade biscuits are a must for Christmas. Try these cookies that combine the goodness of nuts and spices. They make a nutritious snack for children and adults alike.

Chocolate Walnut Cookies

Ingredients

Flour: 1 cup
Chocolate powder:
quarter cup
Powdered sugar: quar
ter cup
Chopped walnuts: half
cup
Condensed milk: quar
ter cup
Butter: quarter cup
Baking powder: half tsp

Method: Sieve together flour, chocolate powder and baking powder.

Rub butter into the mixture. Add sugar and walnuts. Bind the flour mixture with condensed milk.

Form small balls and place on a greased tray. Bake in a moderate oven (350 degree C) for 15-20 minutes until firm, cool.

Cinnamon nut squares

Ingredients

Butter: 1 cup
Brown sugar: half cup
Powdered sugar: half
cup
Sifted flour (maida): 2
cups
Chopped cashew nuts:
three-fourth cup
Egg yolk: 1
Egg white: 1
Vanilla essence: half tsp
Cinnamon powder: one-
and-a-half tsp

Method: Beat butter, brown sugar, powdered sugar, egg yolk and vanilla essence. Add cinnamon powder and sifted flour and form into a ball. Pat the dough into an un-greased baking tray. Brush with beaten egg white. Press in chopped cashew nuts. Bake at 180 degree C for 18 minutes. Cool for five minutes. Cut into squares while warm.

X-mas Whirls

Ingredients

Butter: 1 cup

Powdered sugar: half a
cup
Sifted flour: two-and-a-
quarter cup
Vanilla essence: 1 tsp
Egg yolk: 1
Hard-boiled egg yolk: 1

Method: Mash hard-boiled egg yolk well. Combine butter, egg yolk, mashed hard-boiled egg yolk, sugar and vanilla essence. Beat well. Add sifted flour to form dough. Roll the dough between the hands to form small ropes about 3 inches long. Twist the ropes into fancy shapes. Brush the whirls with beaten egg white. Bake on an un-greased baking tray at 180 degree C for about 10-12 minutes. Cool on a wire rack.

Orange Squares

Ingredients

Butter: half a cup
Sifted flour: 1 cup
Powdered sugar: half
cup
Dessicated coconut:
three-quarter cup
Chopped walnuts: half
cup
Eggs: 2
Baking powder: quarter
tsp
Vanilla essence: half tsp
Salt: a pinch

Method: Rub butter into sifted flour. Pat into an un-greased 8" square baking tray at 180 degree C for 10 minutes. Beat eggs and powdered sugar till frothy. Add desiccated coconut, chopped walnuts, baking powder, vanilla essence and salt. Spread the mixture on the partially baked crust. Bake at 180 degree C for about 20 minutes. Cool for 3 minutes. And then spread the glaze on top with a knife. Cut into squares when cold.

For the glaze

Ingredients

Powdered sugar: 1 cup
Grated orange: 2 tsp
Orange juice: 3 tsp

Method: Combine powdered sugar, grated orange rind and orange juice.
