The past five years have been very exciting for food lovers, and those who love the business of food. Changing lifestyles, a huge leap in disposable income of middle class families, an attitude of "let's eat outside" and acceptance of new foods as regular items have set the trend.
Food is like fashion. It has items in vogue, it has dishes in demand, then the demand changes. One trend fades away, another trend takes over. Let's look at the trends . First let's talk of exotic simplicity, a trend which became very popular and is still living its life with many more years to come.
Exotic simplicity of food is the buzzword still. Uncomplicated and a simple combination of healthy ingredients are still a must. A herb used in cooking must taste like a herb and be easily identifiable in terms of taste and appearance. Food simply needs to be exotically simple for that fresh look.
Next we saw the ever-strengthening trend of exotic ingredients. The names of food ingredients, which made people search the dictionaries till a few years back are still hot and happening. Who would have thought of eating Asparagus in our own desi Kadahi masala? Or a shift from tandoori gobhi to tandoori broccoli?
A decade back it would have been pre-mature plucking of corn! But it is selling as a hot item now as baby corn! Using lemon leaves in cooking must have been considered an outrageous idea then. But it is an exotic ingredient now.
People still do look for food, which has stress killing properties. That is food rich in vitamin C, B-Complex, magnesium, calcium and potassium. All these are available in oranges, grapefruit, kiwi fruit, strawberries, green/red peppers, mangoes, and cauliflowers, meat, seafood, legumes, whole grains, enriched breads and cereals, dairy, leafy green vegetables, tofu, wheat germ, almonds, sunflower seeds, and pumpkin seeds, yogurt, cheese and chickpeas.
