Sole, snapper and more

For seafood lovers, there is a range of sumptuous dishes waiting at R.E.D. in Radisson MBD

The denizens of `Saadi Dilli', who usually swear by the power of chicken in its myriad avatars - from curry to tandoori to roasted, can get a sumptuous delight of seafood at the Radisson MBD, Noida, where the delectable Sim's Seafood Studio-II is being held at its restaurant, R.E.D. The spacious restaurant provides the perfect ambience for a relaxed evening, with adequate space between tables to help maintain the delicate balance between privacy and cosiness. Lilting music at the background makes things even better. In its second edition - the sequel to last year's Sim's Seafood Studio - has the freshest of fish, sizzling lobsters, snappy prawns and much more. Also on display, in an innovative and rather inviting style, are the gems of the ocean, ranging from red snapper, sea sole, pink salmon, crabs, lobster and oysters, enough to boost the appetite of the connoisseurs. You will find an unassuming and friendly Chef Sim mingling with his guests, trying to gauge their mood, giving his suggestions liberally, so as to serve them with his exotic creations. Says the Chef, "This year, I have added to the repertoire delicacies like steam sole in orange flavoured black bean sauce, the tuna tempura with ginger soya and crab in chilli and pepper."

Another newness this time is the `Fresh Catch of the Day', cooked to suit customers' taste buds, ranging from wok-fried, stir-fried, deep- fried, shallow-fried, grilled or steamed, all in a variety of sauces like black bean, chilli bean, hot garlic, chilli sambal, oyster or yellow curry.

As Assistant Manager, Food & Beverages, Sanjay Das explains, "Chef Sim's great performance at the Show Kitchen is converted to a live studio to allow our patrons to be a part of the ringside action, that will certainly enthral all the senses." At R.E.D., Chef Sim says, each of the dishes has been crafted with care and has been paired with some of the finest wines. The recommendation for the discerning includes the Singaporean chille crab with Chablis ora grilled tiger prawn with a Riesling.

The food festival is on till February 11.
