Rayalaseema mamsam pulusu (mutton gravy)

Ingredients

Chicken: 1kg

Curd: 1tbsp

Chilli powder: 1 tbsp

Salt: 3 tsps

Turmeric powder: 1 tsp

Coriander seeds: 2 tsps

Dry coconut powder: 1cup

Gasalu: As desired

Cloves: 8

Cinnamon: 4 pieces

Onions, medium sized: 2

Ginger, medium sized: 1

Garlic: 10 flakes

Ghee: 1 tbsp

Oil: 2 tbsp

Tomatoes, medium sized: 2

Cashew nuts: 15 pieces

Method

Fry coriander seeds, cinnamon, cloves and grind into fine powder and keep aside. Now, separately fry gasalu and coconut and make smooth paste and keep aside. Make a paste of garlic, ginger, onions separately, and keep aside

Wash mutton, cut into pieces of desired size. Take a pan, put oil and ghee then add paste of garlic, ginger, onions and cook on low fire. Add cashew nuts.

Add mutton into the pan then add salt, chilli powder, turmeric powder, curry leaves and coriander leaves.

Cover with lid and stir occasionally and cook for about five minutes. Then add sliced tomato, curd and keep stirring and cook for about seven minutes. Add about 1 litre of water and five minutes later add gasalu-cocunut paste. Cook for few minutes then add powder of coriander seeds, cinnamon and clove. Shift the entire content into pressure cooker and cook in high flame until 6 whistles. Ater cooker is cool, open and serve hot either with pulao, white rice or chappati.
