Best recipe

Chef comments: Mutton chop with pepper and coconut is a clear winner all the way. A lovely recipe sent by Sailaja with a very nice blend of flavours. My compliments on the nice preparation.

Mutton chops with pepper and fresh coconut

Ingredients:

Mutton chops: 600 gms

Onions, finely chopped onions: 300 gms

Black pepper: 20gms

Fresh coconut paste: 1 cup (or 1/2 coconut made into paste)

spoon Ginger garlic paste: 1 tsp

Ghee: 30gms

Oil to fry chops (approx. 30gms)

Salt to taste

Haldi: 1 tsp

Red chilli powder: 2 tsps

Cloves: 4

Cinnamon (2 1/2-inch sized) powder

Method: Clean and wash mutton chops, add chopped onions, salt, haldi, chilli powder, ginger garlic paste and cloves and cinnamon powder.

Put all these ingredients in a pressure cooker, add two cups water and cook for 15 minutes on medium flame (till cooked).

Remove the lid; add ground pepper and coconut paste.

Cook for another 5 to 10 minutes till the gravy thickens.

Separate cooked chops from the gravy, keep them aside.

Heat ghee and oil in a frying pan and fry chops one by one till chops become brown.

After frying chops keep them aside.

Now fry the gravy in remaining oil till oil leaves sides.

Now add fried chops to the gravy, fry for another 5 minutes.

While frying ensure that chops should remain intact. Oil quantity can be reduced if frying is done in a non-stick pan.

Transfer the mutton chops into a serving bowl and serve with paratha or rice and sambar.
