Quite an assortment Of spongy delights

They had come from Dharmapuri, Salem, and parts of Coimbatore, bearing aloft their creations crafted out of flour, eggs, and flavouring agents — each one of them hoping theirs will bag the prize.

The event: The Cake Contest and Bakery Meet organised by IFF India and Parry Enterprises India at Hotel CAG Pride last Sunday.

A bouquet of flavours – orange, vanilla, pineapple, chocolate – from the 25 creations wafted across the display room, even as the bakers sat down to theory classes on what makes a cake tick. Teaching bakers the nitty-gritty was A. Ganapathy from IFF’s Applications Lab in Chennai. He spoke to them about the importance of flavour, how to camouflage the smell of eggs and how to get the consistency right, every time.

The bakers were told to work on the theme ‘Christmas and New Year’ using IFF flavours.

Some of them stuck to the theme, but some went way off the mark, such as the one with late leader Annadurai’s face on it. The entries were judged by Anuradha of Avinashilingam University, Padma of TNAU and Uthira of PSG CAS.

The first place went to Thangu Cake Shop and baker K. Hari Hara Suthan for a two-tier heart shaped cake made using vanilla powder, milk and pineapple and orange flavours.

The second place went to Sri Vatsha Iyyengar Bakery and baker V. Janarthanan for a cake shaped like Mickey Mouse, and made using vanilla powder, milk and pineapple flavour.

The third place went to Oven Fresh and baker P. Senthilnathan for a cake shaped like a cup, and made using vanilla powder and orange.
