Azzurro hosts a seafood festival to go with the weather

With a sudden dip in temperature in Delhi, seafood has become the flavour of the season.
Azzurro, a city restaurant, recently unveiled its two-month-long seafood festival, starting November, offering a variety of fish and shell-fish like sole, red snapper, rainbow trout, prawns, squid and crabs. Further, seafood is customised to the choice of guests. So you can have your fish fried, smoked, grilled or poached. Head Chef Shrivant Rajgharia can also recommend the choice of wine to accompany the food.
“Delhi eats chicken all the time and seafood is often neglected so far. There is a myth that stale seafood is served in restaurants in summer , which is not the case,” says Rajgharia. “Nevertheless, mercury is showing the perfect timing for the seafood lovers to savour the delights of the delicacy now,” he adds.
But serving the perfect smoked salmon and the like on the platter is no child’s play.
Timing matters
“It is all about timing. In two minutes, squid fish is overcooked and it becomes a piece of sticky rubber. You just can’t play easy with seafood as you can with lamb and chicken. It gives you room for creativity, but not for mistakes,” Rajgharia explains.
Tantalise your senses with tomato and caper prawns as starter which will leave a tangy taste in your mouth and sweet memories to take back home. Goudjones of sole can be entirely a different experience as the fish is marinated in a batter made of yeast and beer and served with tartar sauce and mayonnaise dressing.
For the main course, fennel risotto with seafood of the day can be a perfect choice. Pan-fried red snapper served on a bed of sauté cabbage, chive and white wine sauce is equally enthralling. Sea Bass with Rocket Pesto is pan-fried sea bass served with a peppery rocket pesto with zucchini and fennel risotto.
Or else, dig into grilled jumbo prawns served with a tomato, bell pepper and caper sauce, sauté greens and parsley rice – fulfilling, yet not unsettling.
The average cost of a meal for two is Rs.1500.
