Casa Bianca offers denizens a variety of traditional Christmas cakes



Rich temptation Italian Delight

Christmas and plum cakes go hand in hand. Served traditionally with wine, these soft, dark brown cakes, rich with nuts and dry fruits, have bakeries preparing for the baking spree months ahead. However, it is no longer just plum cakes that are being offered during the season. Offering denizens a variety of traditional Christmas cakes is Casa Bianca.

According to Ingrid, the proprietor of Casa Bianca, of the seven available varieties, two are based on her mother’s recipes - Mom’s Apple Cake and Almond Tarte.

Mom’s recipe

A round cake, Mom’s Apple Cake (Rs. 300) is a butter-and-raisin sponge cake baked with sliced apples seasoned with cinnamon and sugar. “It is a visual delight and has an aroma of cinnamon,” says Ingrid.

Almond Tarte (Rs.320) is a new addition to her menu of cakes. “It is a French recipe. It is like a pie as it has a butter crust base. We have used lots of almonds (powdered), as filling. Caramelised orange is used as garnishing.”

Golden Nut (Rs.280) has dollops of walnuts and cashew nuts. “The base is vanilla sponge.”

Those who want to try a classic American cake ought to try the square-shaped Christmas Spice Cake (Rs.280). “This cake has raisins, cinnamon and cloves.”

Chocoholics have it good as there are two kinds of cakes to cater to their cravings - Italian Delight (Rs.280) and Banana Chocolate cake (Rs.280). While Italian Delight is a dark chocolate sponge cake with coffee fudge icing and silver pearls, the latter is a rich moist cake with dark chocolate chunks and lime icing.

Those who prefer good old fruit cakes need not fret though. Christmas Deluxe Rum Fruit Cake (Rs. 350) has dates, cashew nuts, black raisins, candied ginger, glazed cherries and more soaked in rum. “This is a proper European Christmas cake.”

Fresh butter and eggs are used in all the cakes. No preservatives, additives or artificial flavours have been added, says Ingrid.

The use of fresh cream except for Christmas Spice Cake, which has a thin layer, has been avoided. “This is because fresh cream tends to spoil in a couple of days.”

But those who like fresh cream cakes can choose from Chocolate Mousse, Black Forest, White Forest and Snow White. The cakes all weigh a kilogram. Christmas Deluxe Rum Cake weighs slightly more than a kilogram.

Those interested in placing orders should do so a day in advance. Chocolate Mouse cake however, needs a two-day notice.
