Chef comments: Nice variation of a vada has been sent in by S. Seethadevi. It is healthy and very different from the other different types of vadas made.
It is a unique recipe though the lentils might have to be increased in case you want to have a less sweeter version of the vada. My compliments for the recipe!

Beetroot Vada
Ingredients
Beetroot (peeled & grated): 2 cups
Red gram (tuvar dal): 3/4 cup
Onions: 1/2 cup
Aniseed: 1 spoon
Asafoetida: 1 pinch
Curry leaves: little
Coriander leaves: little
Turmeric powder: pinch
Salt- to taste
Oil- for frying
Water- as required
Method: Soak the red gram for one hour and then grind by adding red chillies, aniseed, salt and little water. The dough should be thick.
Then add the beetroot, onions, coriander leaves, curry leaves, turmeric powder, asaofetida, to the dough. Make vadas and fry in oil. It is healthier and easy to prepare.
