Tasty matters

Here is a recipe of bean pudding with butterscoth sauce for those who want to try out something interesting this New Year’s Eve. It is by by Executive Chef Narender of The Grand hotel, New Delhi,

Ingredients

2 cups well-cooked white pea beans

3/4 cup evaporated skim milk

2 eggs

1/4 cup granulated sugar

1/4 cup brown sugar

Two tbsp apple sauce

1 tsp vanilla

1/2 tsp cinnamon

1/2 tsp nutmeg

6 tsp chopped pecans

Method

Place the beans in a food processor. Purée until smooth along with 1/2 cup of the evaporated skim milk. Add the eggs, sugars, applesauce, vanilla, cinnamon, nutmeg and process them using several on/off turns until combined. Gradually, add the remaining evaporated milk and process until combined. Spoon the mixture into 6 1/2 cup (125 ml) ramekins. Place the ramekins in a shallow baking dish. Pour hot water to reach halfway up the sides. Place in a preheated 350ºF oven for 35 minutes. Remove from the oven and let it cool. Serve drizzled with butterscotch sauce and topped with 1 tsp (5 ml) chopped pecans.

To make the sauce

In a small saucepan, melt 2 tbsp butter. Add 1/2 cup brown sugar and 1 tbsp corn syrup and cook gently until the sugar dissolves. Stir in 2 tbsp whipping cream and bring to a simmer. Let it cool slightly before serving.
