The peach belongs to the family Rosaceae. It is classified as Prunus persica. Peaches are believed to be native to China. They are cultivated throughout warm temperate and subtropical regions of the world. In the fruit, the stone is covered with a fl
eshy substance that is juicy, and has a fine flavour when mature.
The nearly 300 varieties of peaches grown in America have been classified into five races, each with outstanding characteristics, ripening season, and uses. The nectarine is a variety of peach. The principal peach-growing state is California. Peaches can be red, pink, yellow, white, or a combination of those colours. On one side of the fruit is a distinctive vertical indentation. Peaches and nectarines look similar, but can be told apart by their skin texture: peaches are fuzzy and dull, while nectarines are smooth and shiny.
Nutritional value
One peach supplies about 5 per cent of an adult’s minimum daily Niacin (B3) needs. Fresh and canned peaches have about the same amount of Vitamin A. Peaches supply an edible amount of the Vitamin C to the body. They are also rich in phytochemicals which act as antioxidants. Phytochemicals are critical for healthy skin and can be thrown out of balance in the body by exposure to the sun’s UV rays.
Now, for a recipe.
Lemony peach
Ingredients
Honey: 1 cup
Rice wine vinegar: quarter cup
Juice of three lemons
Pimentos (minced): 3
Sea salt: 1 tsp
Grilled peaches: 4, halved and pitted (peaches must be firm to hold up to the grilling process)
Goat cheese: 8 tbsp
Olive oil: 2 tbsp
Method: Put the honey, rice vinegar, lemon juice and peppers to a medium saucepan. Simmer on a low flame for five minutes. Set the mixture aside to use for the grilling. Cut a flat spot on the skin side of the peach about the size of a quarter so that it will sit on the plate. Salt the flesh side of the peach. Rub the peaches with olive oil. Place the peach fleshy side down on the grill. Grill for two minutes. Flip the peaches over with the skin side down, now and grill for 2 minutes. While the skin side is grilling, put 1 tbsp of goat cheese in the hole that once held the pit. Add salt to taste. Place grilled peach on dinner plates and drizzle liberally with the spicy lemon honey.
