Healthy ‘hummus’

High in iron, chickpeas are a good source of protein and dietary fibre



A healthy option

Spread/dip made from cooked, mashed chickpeas, which is blended with tahine (sesame seed paste), lemon juice and garlic, it’s a staple of Middle Eastern food.

Hummus is traditionally eaten with unleavened bread such as pita or kuboos, and is often served with a generous dash of olive oil. It is sometimes accompanied by pickled turnips, cucumbers and green chillies.

High in iron and vitamin C, chickpeas are a good source of protein and dietary fibre. Some scientists have suggested that the nutritional benefits of the chickpea, one of the earliest crops cultivated in Mesopotamia, led to the early rise of civilisation there.
