Exotic mushroom stir-fry

Ingredients
Mushrooms – 8
Oil – 2 tsp
Garlic – 1 tsp
Green Chilli – 2
Onion (large) – 2
Coriander Leaves
Chilly Powder – 1 tsp
Coriander powder – 2 tsp
Turmeric powder – Half tsp
Pepper powder – 1 tsp
Garam masala – Half tsp
Salt to taste

Method
Though this is a simple and easy to make dish and can be done very quickly care must be taken not to overdo the mushrooms.
Heat the oil in a pan and add chopped ginger and garlic and fry it till done.
Finely slice onions and add along with green chilly and sliced mushrooms. Take care to slice them in shape. Do not chop them into cubes. This destroys the visual appeal of the dish.
Further add coriander powder, chilli powder, turmeric powder, garam masala, pepper powder and salt. Sautee this for sometime taking care that mushrooms don’t turn squishy. Fry further till it is done.
Garnish with coriander leaves and serve hot. The other way to do this recipe is to boil the mushrooms, slice them and proceed the same way but stir-fry on high heat for a very short time.
