Ingredients
Maida-750 gms
Cornflour-250gms
Eggs-2 no.
Water-to make a dough
Salt-pinch
Method
Mix all ingredients to make tight dough. Keep aside for 15 minutes. Divide the dough into small evenly sized balls. Roll out the balls thinly and slightly cook over a hot dosa plate. Do not make it dry. Keep aside with proper covering.
For the filling
Grated coconut- 1 cup
Sugar 2-tablespoon
Cardamom powder- a pinch
Mix together all the ingredients and keep aside.
Chopped cashewnut-1/2 cup
Chopped raisins-1/2 cup
Chopped dates-1/2 cup
Sugar-3 tbsp
Ghee-100ml
Heat a little ghee in a frying pan and stir-fry all the ingredients together for two minutes. Remove from fire and pour the mixture into a bowl.

Final assembling
Take a loose bottomed cake tin and grease it with ghee or butter. Then place one cooked sheet on the bottom of the tin. Spread filling no.1 over it and cover it with another sheet. Spread filling no.2 and cover again with the sheet. Continue this process until 80 per cent of the tin is filled. Brush the top sheer with ghee and brown the pathiri under a salamander or in an oven. Refrigerate before serving and cut into the shape you required.
Note A popular Malabar Muslim sweet, you can make it richer by applying beaten eggs to the sheet during the final assembling.
