It is soft and melts in the mouth. Baluchi Chapli Kabab is Master Chef Irshad Qureshi’s trademark dish. He is descended from the master cooks of the royal court of the Raja Jahangirabad, a few kilometres from Lucknow.
This dish originated in Pakistan’s Baluchi province. The chef has an interesting story on how it got its name. In a stampede, as all ran to save their lives, a lot of minced meat fell and got chappal (sandal) imprints as people ran over it. When cooks saw it the next day, they made a new variety of kabab with hot spices and named it ‘Chapli Kabab’ – also as a means to pay respect to the ‘rizq’ or food.
Pakistan’s Chapli Kabab is spicier with a lot of black cardamom, nutmeg (jaiphal) and javitri. It is eaten with lots of dry fruits and nuts. But the chef here makes it light by mixing green cardamom and raw mango. Best served with pomegranate chutney and fresh mint (pudina) chutney.
