Duck Roast

This delectable duck roast is a Kuttanaadan speciality. The duck turns perfect party fare in the rich and spicy gravy. Many a time the gravy is thick enough to coat the pieces and many a time just a sumptuous sauce. Whatever the texture, it is the strong peppery flavour that will fill your senses. But also enjoy the bouquet of roasted spices that rises through the flavoured meat. Onions, garlic, coconut and a host of spices make the base of this mouth watering dish, but one never quite gets down to the secret of the dish as it’s all this plus something elusive. Keep on trying to find that! Its best accompaniments are plain rice, appam or the regular Kerala parotta.
