Fish tuna pepper

So, why is tuna fish one of the most sought after dishes compared to other kinds of fish? It is found to have more protein and vitamin D, which infants can absorb too. It is also one of the most important inclusions in the diet of weight trainers. Fish tuna pepper at Café Uno is an interesting dish that retains the flavour of tuna but with the zest of pepper.

Chef David Anstead at Café Uno, Shanghri-La Hotel, says he prefers to use freshly ground black pepper and not out of the jar to spice up the dish. When peppercorn cracks, it releases oil which is fragrant and adds a spicy flavour to the ready dish.”

The tuna is cooked in vegetable oil, with vinegar, thyme, and sugar. The chef adds red wine and apple juice for that “added taste”.

While the dish is found mostly in Taiwan, Japan, South Korea and Indonesia, besides France and Spain, its origin is unknown. This recipe goes well with jasmine rice.

Price: Rs.750 plus taxes

Bottomline: Lightly spiced, this dish blurs the boundaries between western and eastern cuisine.
