wholesome Russian salad has no fruits

Russian salad, as the Russians serve it, has no fruits and the ingredients are boiled, except for onion. Svetlana Pillai says it is a cold starter very popular in Russia. Here is how it is made. Cut boiled potatoes, carrots and boiled eggs into uniform pieces. Pickled and raw cucumber also need to be sliced in the same way. Put in some boiled green peas and pieces of meat, together with raw onion, sliced in the same shape, all small and squarish. In fact the uniform size is what gives the Russian salad its handsome appearance. Toss in some mayonnaise and put it in the fridge for an hour. Serve it with a slice of fresh bread.
