Dragon Cauliflower

Usually the cauliflower tastes cabbagey, is steamed or doused with the regular masala. This preparation takes off most of the vegetable’s inherent blandness by bouncing strong flavours off it, and emphasising its crisp texture rather than cooking it to a mush. This dish is a combination of the chewy, crunchy, soft, spicy, hot, sweet, all at once. An ethereal sweet-hot flavour tingles your senses when you impatiently put a spoon of this golden-brown, deep-fried, crumbling cauliflower into your mouth. Tossed in chilly sauce with cashew nuts and honey it makes a perfect dish to go with the chappathi or porotta. Even when rolled into them it is still intense, the onion, garlic and the chilly sauce. The next moment you savour the honey, bite into the nuts and sample the not-too-crispy pieces of cauliflower.

Bottomline: Not surprising if you lick the dish dry!
