Time for vegetable broth

It’s simple to make and very healthy


Vegetable broth is a small meal by itself. One can add macaroni or rice to it to turn it into a complete meal for those wanting to go light on food.

Ingredients

Vegetable stock: 260 ml

Onion: 10 gm

Carrot: 10 gm

Zucchini: 10 gm

Celery: 10 gm

Leek: 10 gm

Potato: 10 gm

Basil pesto: 5 gm

White wine: 8 ml

Salt: 3 gm

Boiled beans: 5 gm

Parmesan cheese: 3 gm

Olive oil: 5 ml

Method

In a pan, heat oil and sweat the vegetables. Add basil pesto and white wine and reduce the flame. Add the vegetable stock and cook till the potatoes are tender. Add more stock and adjust seasoning and consistency. Serve with beans and parmesan cheese.
