Variety batter Try a variety of dosas
Delicious, piping hot dosas, topped or stuffed with a variety of food items. That is what is on offer at ‘Monsoon Dosa fest-08’ at Ruby Arena Hotel near Medical College. Held at the Sapphire banquet hall, a part of which has been converte
d into an impromptu restaurant, patrons can watch chefs create mouth-watering dishes based around the simple dosa batter.
Unusual combinations
A look at the menu reveals 101 types of dosas, some of them quite unusual, in a variety of vegetarian and non-vegetarian combinations. “I wanted to create unusual yet tasty combinations to go with dosas. So I incorporated unfamiliar items like olives and oregano into the dishes, apart from giving a twist to familiar vegetables and meat dishes,” says chef M.N Rajnikanth, the man responsible for conceptualising the festival. “I have actually created dosa dishes named from A-Z,” he adds with a grin.
One of the most interesting dishes on the menu is Biriyani Dosa (Rs.40). “No, it does not mean it is stuffed with rice,” laughs Rajnikanth. “Rather, it’s a play on the layers in a Biriyani. Here the dosa has three different layers – fish, chicken and meat,” he explains. Another is the chef’s special ‘Arena’ dosa (Rs.50) filled with three varieties of masalas: vegetarian, non-vegetarian and egg. The Kadai dosa (Rs.30) comprises small dosas tossed together with masalas and served in a Kadai pan. An unusual Dingiri dosa (Rs 30) stuffed with gingelly seeds is also available. Macaroni dosa (Rs.20), topped with pasta and cheese, is another unusual dosa.
The Punjabi dosa (Rs.25) which has some of the traditional items of Punjabi cuisine including mint, kasuri methi (fenugreek), asparagus and cornflakes; Dal makhni dosa (Rs.20) made with lentils; Chat-pat dosa (Rs.20) made with chat masala; Mugalai chicken dosa (Rs. 60); Palak dosa (Rs.30) and Pudina dosa (Rs. 20) to name a few, bring in a north Indian flavour to the menu.
Tempting the palettes of seafood lovers are Portuguese fish dosa (Rs.50), a continental adaptation filled with fish baked in thick tomato gravy; grilled prawn dosa (Rs.250); Zeess me dosa with baked prawns (Rs.100); grilled fish dosa (Rs150) stuffed with karimeen masala (pearl spot) and seafood dosa (Rs.50).
Non-vegetarians not to be disheartened, the menu has a range of chicken and meat filled dishes at reasonable prices, including baked chicken dosa (Rs.30); chilly chicken dosa (Rs.50); chicken sausage dosa (Rs.30); mutton roast dosa (Rs.140) and a number of beef based dishes (all Rs.30). For those with the sweet tooth there is the apple dosa (Rs.20); litchi dosa (Rs.50); honey dosa (Rs.30), cashew kismis sweet dosa (Rs.30) and the jaggery with coconut dosa (Rs.20). All the dosas in the menu are accompanied by nine different types of chutneys including mint, tomato, dates, onion, coriander, mango, coconut, mixed masala and dried chillies.
The festival is from 6 p.m. to 10 p.m. and goes on till August 8.
