Bakkwa


Apopular Chinese style dried meat dish, similar to jerky. Usually made from pork, though beef, chicken and vegetarian (soya-based) bakkwas are also quite common. Bakkwa is prepared by marinating thin slices of meat in salt, sugar, honey and spices an d then smoking or barbecuing them. Many traditional versions are made from minced meat. The dish is very popular in Malaysia and Singapore (you can’t find a Chinese market without it) and is traditionally gifted during the Chinese New Year. Can be eaten on its own, as part of a sandwich, or a larger cold dish.

It will keep for quite a while, even without refrigeration.
