A soup of Thai origin, which is very popular in Singapore, Malaysia and Indonesia also. With its distinctive hot and sour flavour, it is usually made of prawns or seafood, and sometimes chicken. The basic broth is made from stock to which a number of fresh herbs are added, which gives the soup its wonderful flavour. The condiments include lemon grass, kaffir lime leaves, galangal, fish sauce, tamarind and crushed chillies. Mushrooms may be added, and the whole thing is garnished with plenty of coriander leaves. Nowadays, commercial tom yum paste is available to make things easier in the kitchen.
