The boli is a delectable blend of contrasts. Neither too dry nor too sweet, these bolis have that right dash of nutmeg and cardamom that play hide and seek on your taste buds. Not thin like a papadam or stuffed like an ela appam. But it does have a scrumptious filling of cooked Bengal gram (channa dal) and sugar. This filling is put into a ball of maida and rolled into thin rounds that are then roasted on a girdle with generous dollops of ghee. Each boli costs Rs. 3 and a special boli (made with ghee) costs Rs. 4. Have it soaked in Paal payasam or just like that, bolis provide that finishing touch to a traditional festive sadya.
