Kothu kozhi



Ingredients

Chicken: 1.3 kg

Onion (sliced): 600 gm

Ginger (chopped): 2 tsp

Green chilli: 10 no

Tomato (chopped): 400 gm

Chilli powder: 3 tsp

Black pepper: 1 tsp

Garam masala: half tsp

Salt: as required

Fennel powder: 2 tsp

Curry leaves: as required

Pudina leaves: as required

Coconut oil: 200 gm

Method

Boil the whole chicken in water, de-bone and keep aside. Pour coconut oil in a tava. Add ginger, garlic and green chilli. Sauté till golden brown. Add onion and continue to sauté.

Add chilli powder, black pepper, fennel powder and garam masala. Now add the de-boned chicken to the gravy paste. Stir slowly and thoroughly until the chicken absorbs the flavour. Add tomato, salt, curry leaves and pudina leaves. Recipe serves six.

Kothu Kozhi goes well with ghee rice, naan and porotta.
