Try the fresh fruits of Australia’s seas



All about authenticity Chef Alessandro Pavoni

Take the freshest and most varied ingredients. Bring on the secrets of the finest cuisines. Blend it together under the expertise of a master chef. And you have the Australian Seafood and Wine Festival being held at Hyatt Regency, Delhi. This festiva l brings ingredients and wines from Australia, the land of fresh air and bountiful seas. These ingredients are then prepared by Italian-born, Australian chef Alessandro Pavoni at La Piazza, Hyatt Regency’s Italian restaurant.

Dr. Lachlan Strahan, Australian Deputy High Commissioner to India, introduced the festival recently. Pavoni is the Italian Executive Chef of a modern Australian/Mediterranean restaurant harbourkitchen&bar, Park Hyatt Sydney. It is known for its traditional Mediterranean cuisine with a modern twist. Speaking before the formal launch, the north Italian said, “Because of Australia’s sheer size and clean environment, you get authentic ingredients, be it buffalo mozzarella or olive oil. Chefs from across the world can come to Australia and make their own cuisine, since all the ingredients are available.” He adds, “I’m very impressed by the wine, seafood and dairy products available here.” Timothy Bruce, General Manger, Hyatt Regency reveals, “The promotion will feature fresh seafood specially imported from Australia, facilitated by The Australian Trade Commission and supported by Singapore Airlines.” The seafood range includes, Hervey bay scallops, blue swimmer crabs, king prawns, mussels etc. Since Italian restaurants are found in all Hyatt hotels, this promotion only highlights the hotel’s philosophy.


The special Sunday lunch and on-going a-la carte menu includes scallops with vanilla puree and celery salsa, ravioli with sautéed king prawns, mussels with saffron etc. the food has been paired with some of the best Australian wines. For example, Hunter Valley, Australia’s oldest and best known wine region, is known for its robust shiraz.

The Australian Seafood and Wine Festival is a part of the Australian Government’s Utsav Australia programme to showcase and raise awareness on Australian business and products in India. The festival runs till Tuesday at Hyatt Regency, New Delhi.
