The staple item in a South Indian menu - mini sambar idli – surely tastes different at this joint. The secret lies either in the batter or the sambar.
Raw and boiled rice and urad dal are soaked and grinded. After six hours it is kept in the freezer to be used after 24 hours. Similarly for the sambar, moong and thuvar dal are mixed in equal proportion and it is prepared with lots of vegetables. The idli batter is spread on the idli plates that are greased with ghee. Once the idlis are steamed, they are soaked in the sambar.
Is best when served hot and it is indeed a fun digging for the mini idlis in a bowl full of sambar.
