Ropa vieja


Literally, old clothes in Spanish, ropa vieja is beef cooked so tenderly that it falls apart resembling rags.

The dish makes use of a sofrito, which is a sauté of onions, garlic and green pepper made beforehand and used to flavour various dishes; like many dishes, ropa vieja is often said to taste better a day after it is made.

It’s made by boiling flank steak till it is tender and shredding it; it is then added to the onion, garlic, green pepper sauté along with chopped tomatoes and stock and cooked to a thick consistency.

It is usually served with rice and other accompaniments.
