Chilli con carne

Quintessential Tex-Mex cuisine, it is literally chilli with meat, a spicy dish made essentially with ground beef and chilli peppers; however tomatoes, garlic and cumin are also commonly used to enhance the flavour. The dish can also be made with beans and other meats. There is controversy over the origins of the dish, some tracing it to Mexico, though others deny it. Commercially sold chilli almost always includes beans; purists insist on chilli without beans. Best had with a glass of cold beer, cola or cold milk to lessen the impact of the chillies.
