Lox is salmon that has been cured by brining. The thinly sliced cured salmon is typically served on a bagel. The dish’s origins lie with East European Jews, who introduced it to the U.S., where it is quite popular. The brining of the salmon is basically done with salt, though it is quite common to find sugar, lemon juice, and spices added for extra flavouring. Variations include dry brining (applying salt directly to the fish) and cold smoking to produce a distinctive flavour.
