Salad days Salads are healthy and filling
Vegetable and curd salad
Ingredients
Cabbage, finely chopped: 1 cup
Carrot, finely chopped: 1 cup
Cucumber, finely chopped: 1 cup
For the dressing
Fresh curd: 2 cups
Salt and pepper to taste
Method
Soak all the chopped vegetables in cold water. Remove from water after some time. Tie the curd in a muslin cloth. Let excess water drain. Mix the curd and the vegetables. Add salt and pepper and serve chilled.
Mushroom delight
Ingredients
Mushrooms: 100 gm
Capsicum: 100 gm
Fresh paneer: 100 gm
Spring onions, finely chopped: 2 tbsp
Coriander leaves, chopped: 2 tbsp
Salt to taste
For the dressing
Orange juice: 1 cup
Honey: 50 gm
Black pepper: 1 tbsp
Black pepper, freshly ground: 1 pinch
Method
Mix the orange juice, honey, vinegar and pepper to make the dressing. Mix well and chill it. Clean and cut the mushrooms, capsicum and paneer into cubes. Add the spring onions. Chill it. At the time of serving, pour the orange dressing. Add salt to taste. Toss lightly and serve.
