MY GRANDMA'S RECIPE

How to make...Thattai

VIDYA BABU

An easy-to-make recipe of everybody’s favourite savoury


Thattai is a traditional South Indian snack, great to nibble with piping hot tea on a rainy day. I learnt this recipe from my mother who was an excellent cook.

What you need

Raw rice flour - 600 gm

Roasted urad dal powder – 3 tsp

Butter - 50 gm

Salt – to taste

Sesame seeds - 3 tsp

Coconut, grated - 1/2 cup

Coconut oil -10 gm

Bengal gram dal – 3 tbsp

Asafoetida - 1 tsp

Water to prepare dough

Oil for deep frying

Cooking instructions

Soak rice in water for half-an-hour and dry on a cloth for 30 minutes.

When still damp, grind to a fine powder.

Sieve the flour and fry it in a kadai to remove any excess dampness. Sieve the flour again.

To this flour add butter, salt, coconut, sesame seeds, urad dal powder, Bengal gram dal, asafoetida and mix well.

Add water and make a soft dough. Apply a little coconut oil to your palm.

Make a lemon-sized ball of the dough and pat it flat into a small circle.

Transfer it into the hot oil.

At a time 10 to 15 thattais can be fried.
