Chicken satay with peanut butter sauce

Chef-de-Partie D.V. Ramesh has been working with Hotel Sangam, Tiruchi, for over a decade now. He specialises in Chinese and Continental dishes.

INGREDIENTS:

Chicken fillet: Six pieces

Onion: One

Lime rind: 5 gms

Salt: To taste

White pepper: A pinch

Soya sauce: 15 ml

Brown sugar and ginger-garlic paste: 10 gms each

Turmeric powder: 5 gms

Coriander powder: 15 gms

Ajinomoto: A pinch

Oil: 10 ml

METHOD:

Clean the chicken fillets thoroughly. Make a paste with all the ingredients mentioned and marinate the fillets in this paste.

Heat the griddle and grill the fillet till the satays become succulent and golden brown in colour.

Serve hot along with peanut butter sauce.
