Apricot dessert

How do I make khubani ka meetha? Is this available in the market as a branded product?

Srinivasa Gopalan, Sainik Puri

HERE IS the recipe for khubani ka meetha: Dry apricot - 1kg; sugar - 1kg; cream -10 gms; almonds - 10 gms; kewra/gulab jal - 2 drops. Method: Soak apricot in water for 24 hours. De-seed it.

Boil sugar till one-string consistency. Add apricots, cook for 20 minutes on slow fire.

Keep side to cool. Add rose water/ kewra and chopped almonds. Keep in refrigerator. Serve cold, garnished with cream on top.

Tinned khubani ka meetha is available under the Kitchens of India series of the ITC group. One can perhaps check it out in supermarkets.
