Mewar food goes Grand
AS YOU enter Intercontinental The Grand's Baluchi restaurant in New Delhi, you are taken by surprise with Rajasthani music and folk dance. A waiter comes and greets you with the welcome drink of Rajasthan, tangy in taste.
The festival is being hosted daily for lunch and dinner till September 28 to savour authentic food from the renowned Karan Cuisine, presented by Kanwar Vijay Singh Bedla and his wife Kawarani Sugan Kumari. Originating from the royal kitchen of Mewar, the cuisine prides itself in offering an interesting plethora of unique delicacies for both vegetarian and non-vegetarian diners.
With over 50 dishes on the menu, a special feature of the Karan Cuisine of Bedlas is the extensive and the imaginative use of corn in combination with various meets and desserts to create unique flavours that will certainly leave one licking fingers.
Commenting on the festival, Bedla says, "Having travelled across the world and receiving a warm response from each destination, we hope that Delhi will appreciate our creations and look forward to winning the hearts of the Dilliwalas." Ask him about the royalty of the food and he utters, "Every Rajput family has the cuisine of its own kind and our family is the first one to come out with this concept and tried to encourage others."
The cuisine offers multiple preparations like rotis of various kinds with wheat, corn, bajra and other grains, variety of desserts made with corn and fruits, dal bati choorma, makkai pappads, bhindi, brinjal and parwal to name a few for the vegetarians. The non-vegetarian offerings include various kinds of sooley where strips of various kinds of meat are marinated and roasted on charcoal, dahi samose ka maas (mutton samosa topped with sweet yoghurt), padampuri murg and achari murg, etc.
